1 Tbl olive oil
1 medium onion, minced
1 garlic clove, minced
1 ½ cups short grain brown rice, rinsed and drained
3 cups vegetable stock or water
15 oz can of Eden Garbanzo
Beans, rinsed and drained
1 ½ cups cremini mushrooms, sliced
1 cup shiitake mushrooms, sliced
½ cup diced tomatoes
½ tsp sea salt
¼ tsp black pepper
2 Tbl fresh parsley, minced
In a large saucepan, heat oil over medium. Add onion and garlic and sauté 2 minutes. Add mushrooms, salt and pepper. Sauté another 5 minutes. Add rice, vegetable stock, garbanzo beans and tomatoes. Cover and bring to a boil. Reduce to low and simmer for 1 hour. Remove from heat and stir in parsley.
